Heatoilinadeepfryerto375.Youwantjustenoughoiltocoverthe
wingsentirely–aninchorsodeepatleast.
Combinethebutter,hotsauce,groundpepper,andgarlicpowderina
smallsaucepanoverlowheat.Heatuntilthebutterismeltedand
theingredientsarewell-blended.
Combinetheflour,paprika,cayennepowder,andsaltinasmallbowl.
Ifthewingsarefrozen,besuretodefrostanddrythem.Putthewings
inalargebowlandsprinkletheflourmixtureoverthem,coatingeach
wingevenly.Putthewingsintherefrigerator60-90minutes.
Thiswillhelpthebreadingtosticktothewingswhenfried.
Putallthewingsinthehotoilandfry10to15minutesoruntil
somepartsofthewingsbegintoturndarkbrown.Removefromtheoil
toapapertoweltodrain.Don’tletthemsittoolong,becauseyou
wanttoservethemhot.Quicklyputthewingsinalargebowl.Addthehot
sauceandstir,coatingallofthewingsevenly.
Servewithbleucheesedressingandcelerysticksontheside.
